Grapefruit and Avocado Salad

When I say I grew up with this salad, it's true. Whenever my Mom could get a ripe avocado in New Brunswick, Canada (rarely but yearly) we would eat this salad. Peeling the grapefruit might sound tedious, but I've tried it both ways many times, and trust me, you will never regret including this detail in your prep time. I've added the beets for detox purposes, but it's not the original recipe. 

INGREDIENTS

·       Grate fresh beet or use boiled beets (optional)

·       1.5 whole grapefruit, peeled. Reserve 1/2 for dressing

·       1 ripe avocado, sliced lengthwise (do this last)

·       Finely chopped onion to taste

·       1 Head of bib lettuce or 2 bunches mesclun mix

·       2 tablespoons extra virgin olive oil

·       Juice from ½ grapefruit or lemon

DIRECTIONS:

  • Delicately peel the grapefruit sections
  • Chop/grate rest of ingredients
  • Slice avocado thinly
  • Into salad bowl gently add ingredients so as not to break grapefruit and avocado
  • Dress and toss with your best cold pressed extra virgin olive oil and remaining grapefruit juice.

Citrus Salad

This recipe brightens the complexion, hydrates from the inside out, circulates the blood to the your most external organ and makes you sweat a little.

INGREDIENTS:

❏ 4 Cara Cara or Blood Oranges, peeled and segmented

❏ 2 tablespoons raw honey or Blue Agave

❏ ½ bunch fresh Spearmint leaves

❏ 1 tsp Walnut oil ❏ Large dash of cayenne pepper

❏ 2 grapefruit, peeled and segmented

❏ zest of one lime

DIRECTIONS

● Peel citrus and segment

● Wash and tear fresh herbs

● Add leaves to salad

● Toss honey/agave, oil and zest of lime

● Drizzle with walnut oil

Watermelon Seed Salad

Your friends will be jealous of your detox food with this unique watermelon seed salad, spicy and cleansing. In fact all seeds are super foods, the very stuff that life is grown from. Black seeds are the cure for everything but death, while mustard and cumin are warming to the lung eliminating congestion. `

INGREDIENTS:

❏ Watermelon cubed or scooped with seeds

❏ 1 tsp mustard seeds

❏ 1 cup organic and living Boston bib lettuce

❏ 1 T black seeds

❏ 1 T cumin seeds

DIRECTONS:

● Lightly toast mustard and cumin seeds in a dry pan.

● Toss seeds with lettuce and watermelon all in a bowl.

Recommended dressing: Bare There Dressing
